Ephtah Specialty Coffee supports sustainable agriculture, fair conditions for farmers, and an active role for women throughout the process. In the renowned coffee region of Gedeb, they operate the Chelbesa processing station, where up to 150 seasonal workers work during harvest on 2 hectares of land at an altitude of 2,150–2,200 meters above sea level. Ephtah Specialty Coffee aims to build sustainable and transparent supply chains that support farmers and their communities. Coffee from Chelbesa comes from traditional Ethiopian varieties known as Heirloom – genetically rich varieties that occur naturally in the region. Thanks to the high altitude, it is possible to grow excellent coffee with a delicate structure, floral aroma, and distinctive purity.
In the washed method, the coffee cherries first pass through a hulling machine, which removes the skin and pulp. The remaining green beans with pulp residue are then fermented without water in fermentation tanks in Chelbesa. The subsequent drying takes 10 to 15 days on raised beds. In some cases, mechanical dryers are used if outdoor conditions are not suitable. The resulting coffee processed using this method has a cleaner taste, higher acidity, and distinct fruity notes.
