This coffee from Peru is like an invitation to a world of delicate harmony and rich sweetness. Each sip combines milk chocolate with nuts and fresh notes of green apple, which bring a lively acidity complemented by a subtle hint of hibiscus. Each sip is like a perfectly coordinated orchestra of flavors—balanced yet irresistibly complex, with a long-lasting and pleasantly sweet finish that lingers on the tongue. Thanks to the washed processing method, the coffee has incredible clarity, freshness, and a delicate acidity that is sure to enchant you.

The coffee comes from eight producers in the highlands around Jaén, the capital of the Cajamarca region in northern Peru. This area is known for its rich volcanic soil, which, together with tropical rainfall and an ideal climate, creates perfect conditions for growing specialty coffee. In 2018, Falcon Peru SARL was founded, which not only exports coffee but also ensures careful quality control. Farmers receive a quality analysis, cupping evaluation, and bid price, ensuring transparency and fair trading conditions. Thanks to Falcon's Blueprint Project, coffee farms can meet high standards and ensure economic stability for every household involved. In 2022, Peru also became the first location for Falcon's Carbon Project, which focuses on researching carbon emissions at the farm level and finding ways to reduce the environmental footprint of coffee cultivation.

Farmers harvest coffee mid-season and process it directly on their farms, using manual hullers, fermentation tanks, and terraces or raised drying beds for even drying. After processing, the coffee is transported to Falcon's warehouse in Jaén, where it undergoes careful sorting, moisture testing, roasting, and cupping to ensure maximum quality.
