The blend is based on beans from Ethiopia and Uganda. Part of the Ethiopian beans come from Kuri Mountain Coffee, run by Habtamu Fikadu, who is continuing a family tradition dating back to 1945. Today, he works with nearly 400 farmers in the Hambela and Uraga regions, where the 74112 and 74110 varieties grow at an altitude of over 2,000 meters . His station in Gidami and dry mill in Addis Ababa are among the most modern in the region and guarantee top quality. The second component is coffee from Uganda, from the Coffee Gardens processing plant in the Upper Bukyabo area. This company promotes ethical production and trains farmers in sustainable practices to produce clean, transparent, and high-quality coffee.
The Ethiopian part consists only of carefully selected dry cherries (known as jenfel) directly from growers, with selection based on color, ripeness, and aroma—not all cherries meet G4 quality requirements . The coffee is then processed in a dry mill in Gidami, where the dry husk is removed, and then sent to Addis Ababa, where it undergoes final polishing, sorting, and preparation for export. The Ugandan part of the blend is processed using the washed method – the cherries ferment for 20 hours in plastic tanks, are washed with mountain water and dried on African beds in solar dryers. The result is a blend that combines the best of both worlds: Ethiopian floral complexity and Ugandan chocolate richness.
