This fruity Colombian coffee from Sprout Coffee Roasters is a bold, juicy, and creamy coffee that beautifully showcases its tropical character. The flavor profile features lychee, tropical fruits, and a delicately sweet, milky aftertaste reminiscent of the creamy Indian drink mango lassi. This gives the cup a sweet, fruity, and full-bodied character while retaining a pleasant freshness. It’s simply an exotic vacation without having to leave your home or office. 

Behind this coffee is farmer Nestor Lasso from Finca El Diviso in the Pitalito area of Colombia’s Huila region. Nestor, together with Adrian Lasso, took over the family farm and gradually shifted his focus to specialty coffee, processing, and more direct collaboration with exporters. El Diviso was created by merging two family farms near Pitalito and is now among the projects known for their distinctive fermentation processes and modern approach to quality. The coffee grows at an elevation of 1,750 meters above sea level, and the variety is generally described as a blend of different cultivars.

Processing is carried out using an experimental washed method . Only ripe cherries are harvested; these are first sorted and then undergo a 14-hour whole-berry oxidation . The pulp is then removed from the coffee cherries, and they undergo a 60-hour anaerobic fermentation . This is followed by a 12-hour fermentation during which the beans are submerged in water and coffee-cherry pulp from the previous fermentations. This is followed by controlled drying at temperatures up to 38 °C until the coffee reaches a moisture content of 10 to 11%. The result is a distinctive, tropical, and creamy-sweet coffee with a very unique character.
