The blend combines beans from the Jimma region of Ethiopia and the Cauca region of Colombia. The harvest is the work of renowned farmers from the Jimma Farmers Multi-Purpose Agricultural Cooperatives Union and Diego Samuel Bermudez. The coffee comes from the Refisa processing station and the Finca El Paraíso farm; partners Bero and Bio Farm Amazonia also contributed to the processing. The blend features the popular Heirloom and Castillo varieties. These coffee trees grow in very specific microclimatic conditions and at high altitudes ranging from 1,390 to 2,000 meters above sea level. Their African and South American origins thus guarantee a unique complexity.
The processing of the coffees in this blend combines the traditional washed method with modern co-fermentation techniques. The Ethiopian coffee is processed using the washed method, which highlights its purity and bright fruity notes. The Colombian component of this blend underwent co-fermentation—an innovative process in which the coffee ferments alongside natural ingredients.
