Inside the package, two distinct origins come together: Ethiopia Banko Gotiti and Colombia El Elcanto. The Ethiopian portion comes from the Yirgacheffe region, and the current Banko Gotiti consists of local Heirloom varieties grown at an elevation of approximately 1,600 to 2,300 meters above sea level. The Colombian component adds a second layer of flavor to the blend, and together they create a blend crafted specifically with the Christmas season in mind. Both coffees come from the latest harvest; the harvest date listed for this edition is February 2026.
Both components undergo natural processing, in which the coffee cherries are dried whole, allowing the beans to remain in contact with the pulp during drying. Additionally, one portion of the blend is flavored with vanilla during processing, so the vanilla note is not merely a flavor association but is directly linked to the processing method. The combination of two natural coffees enhances the full-bodied sweetness and more pronounced aroma, while the vanilla shifts the resulting profile even closer to eggnog, ice cream, and Christmas baking.
