Guatemala El Panal from The Naughty Dog roastery in Jílové u Prahy is a sweet and bold coffee with higher acidity that combines juicy forest berries with the smooth sweetness of nougat pralines in the cup. A light note reminiscent of red wine emerges in the finish, adding depth and an interesting twist to the overall flavor. The result is a fruity and sweet espresso with a distinctive character that certainly isn’t afraid to stand out from the crowd.
The beans come from Huehuetenango, one of Guatemala’s most famous coffee-growing regions. The Vidés family is behind the harvest; they grow Caturra and Bourbon varieties here at an elevation of approximately 1 ,200 to 1,900 meters above sea level. This is a fresh crop from the January 2026 harvest, so it’s coffee from the current season. El Panal thus combines classic Guatemalan varieties with a distinctly fruity profile, which takes on a slightly wilder character when brewed as an espresso.
After harvest, the coffee undergoes natural processing, during which the coffee cherries are dried whole, along with their pulp. The bean thus remains in contact with the fruit during drying, which often results in greater sweetness and more intense fruitiness in the final cup. The natural processing method lends the resulting espresso greater juiciness, a fuller body, and a slightly fermented character, which adds another layer of complexity to the coffee.
