Guatemala Granada from The Naughty Dog roastery is a naturally processed coffee intended for espresso, which greets you in the cup with sweet fruitiness and an elegant character. Imagine a handful of freshly picked wild berries, complemented by the delicately sweet flavor of nougat pralines, with a velvety note of red wine emerging on the finish. The juicy fruitiness blends pleasantly with the body and sweetness, giving the coffee a rich yet balanced character. The coffee comes from Guatemala’s Huehuetenango region and is associated with farmer María Elena Vides, who has been tending to coffee trees since 1996. The Huehuetenango region is one of Guatemala’s major coffee-growing areas, and thanks to the mountainous landscape of the Cuchumatanes, it offers some of the highest altitudes for coffee cultivation in the country. The local environment promotes the slow ripening of coffee cherries and the development of a distinctive flavor profile. The Vides family has also long been committed to supporting the local community—from founding a school for the children of farm workers to collaborating with the Coffee Care project, which focuses on education and improving conditions for coffee-picking families.
Processing is done using the dry ( natural) method. After harvest, the coffee cherries remain whole and are dried spread out in a thin layer on concrete surfaces or African beds. During drying, they are turned regularly to ensure even drying and prevent unwanted fermentation. Once drying is complete, the dry husk is mechanically removed, leaving only the coffee beans. Natural processing enhances sweetness, fruitiness, and more pronounced aromatics, which in this coffee manifest as notes of wild berries, nougat pralines, and red wine.
