The Naughty Dog roastery is introducing another Ethiopian coffee from the Gedeb region. This Ethiopia CYCLIST GEDEB captivates with its balanced flavor and medium acidity, featuring notes of forest fruits and juicy peaches, rounded out by a subtle finish of milk chocolate. Thanks to its omni roast, you can fully enjoy its character whether brewed as a filter coffee or as an espresso.
The coffee comes from the Banko Gotiti processing station in Ethiopia’s Gedeb region, which employs more than 200 workers during the harvest. They are responsible for receiving the coffee cherries, carefully sorting them, drying them, and conducting quality control on each lot. The station also supports smallholder farmers in the surrounding area by providing pre-financing for the harvest, training, and other resources. It is precisely thanks to this long-term collaboration and emphasis on quality that lots are produced which consistently rank among the most interesting coffees from this region.
This lot was processed using the Super Natural method, which takes classic dry processing one step further. Carefully sorted coffee cherries first undergo approximately 24 hours of controlled fermentation and are only then spread out on elevated African drying beds, where they dry slowly for 3 to 4 weeks. Throughout this period, workers regularly check their condition and turn them over to ensure the drying process is as even as possible. Thanks to this carefully controlled process, the coffee develops a more pronounced fruity character, greater sweetness, and greater flavor complexity.
