Colombia El Paraiso Y05 Washed—Special Edition from The Naughty Dog—is a sweet coffee with pleasantly higher acidity and a distinctly dessert-like profile, blending apricot, strawberry ice cream, and spiced tea, so the cup tastes fruity, creamy, and slightly spicy all at once. The filter roast brings out the juicy fruitiness, subtle sweetness, and spicy finish, resulting in a distinctive yet balanced coffee where sweetness and freshness complement each other nicely.
The coffee comes from Colombia, from the El Paraiso farm in the Cauca region, where it is processed by Diego Samuel Bermudez. This lot consists of the Castillo variety, and the coffee trees grow at an elevation of 1,960 meters. El Paraiso has been a family project since 2008 and has gradually become a place focused on precisely controlled fermentation and the development of new processing methods. Diego studied agricultural management and continues to refine his methods through Indestec, a company dedicated to technologies for consistent coffee processing. The harvest took place in June 2026, making this a fresh harvest from the current season.
Processing is carried out using the Y05 method, which combines extended washed processing with several precisely controlled fermentation steps. Ripe cherries are first disinfected with ozone and remain submerged in water for 72 hours. They are then pulped and fermented for another 36 hours in a bioreactor with added yeast cultures. This is followed by washing using the thermal shock method and controlled drying, which completes the entire process. It is precisely this precise control of each step that is characteristic of the Y05 method and gives this coffee its distinctive and clearly defined character.
