There are no subtle hints here. The fruit takes center stage, the sweetness keeps pace, and the chocolate rounds it all out. This Colombian coffee from the Polish roastery Paloma Coffee Roastery is sweet, distinctly fruity, and pleasantly full-bodied. The flavor profile blends banana liqueur with ripe strawberries and apricots, while dark chocolate adds a deeper, sweeter finish. The natural processing further enhances the fruity intensity and creamier body, resulting in a cup that feels rich yet remains clean and balanced.
Behind this coffee are Nestor Lasso and Jhon Vergara and their Peñas Blancas farm in Colombia’s Huila region. Caturra and Castillo coffee trees grow here at an elevation of 1,650 to 1,850 meters above sea level, where cooler mountain conditions slow the ripening of the cherries. Moreover, Peñas Blancas is not just a production site. The project also supports other growers in the Acevedo area through investments in infrastructure, education, and quality control, and has gradually become one of the local hubs focused on the development of specialty coffee. This lot comes from the 2025 harvest.
The coffee undergoes natural processing, for which only fully ripe, hand-picked cherries are selected. After controlled fermentation, the whole cherries are moved to raised beds, where they dry slowly in the shade for approximately 25 days. The long and gentle drying process helps develop high sweetness, a creamier texture, and a long, fruity aftertaste. It is precisely this method that gives Peñas Blancas its distinctive character and allows the sweet and fruity notes of naturally processed Colombian coffee to shine through.
