Paloma Coffee Roastery presents a Colombian Sidra that combines juicy fruit, pronounced sweetness, and an elegant tea-like note. The flavor profile opens with apple, followed by sweet raisins and dried strawberries. The fruity notes are complemented by a hint of black tea, which lends the entire profile a lighter and subtly astringent character. The result is a clean and complex coffee in which the fresher apple notes pleasantly blend with the concentrated sweetness of dried fruit.
The coffee comes from Finca Juan Martin, located high in the Sotará Mountains in Colombia’s Cauca region, about half an hour from the city of Popayán. The coffee trees here grow at an elevation of around 2,050 meters above sea level. The farm is used not only for coffee production but also for experimenting with different varieties, harvesting methods, and post-harvest processing. Individual processes are tailored to specific lots, and factors such as Brix levels and moisture content are monitored throughout production. Natural vegetation is also left among the coffee trees to help protect the soil on the steep slopes.
This lot of the Sidra variety underwent the Oxidation Washed method, an experimental form of washed processing. The process combines an oxidation phase with subsequent washed processing, resulting in a profile that retains the purity and distinct character of individual flavors. In this case, it highlights a combination of apple, raisins, and dried strawberries, while black tea adds a subtle contrast. The result is an elegant Colombian coffee that blends fruity sweetness with a clean and lighter profile.
