Plum, chocolate wafer, and dark caramel. Tata Nahual focuses on flavors that feel familiar from the very first sip. This Guatemalan coffee from the Polish roastery Paloma Coffee Roastery has a sweeter, chocolate-forward profile complemented by fruity freshness. The flavor features yellow plum, a note reminiscent of a chocolate wafer, and a subtly astringent black tea. The aroma also features lemon, walnut, and dark caramel, giving the final cup a more complex profile than its laid-back chocolate base might suggest. The coffee scored 83.75 SCA points, and thanks to its medium roast, it offers a sweet, harmonious, and easy-to-drink character.
The beans come from the Acatenango region of Guatemala, where coffee trees grow at an elevation of approximately 1,800 to 2,000 meters above sea level. The lot consists of Bourbon, Catuai, and Caturra varieties and is produced by a family-owned company that has been in the green coffee trade for more than 25 years. It has its headquarters and processing mill on the Fraijanes plateau, where it prepares individual coffees and micro-lots for export. It has long collaborated with producers across Guatemala and focuses on consistent quality, careful harvesting, and building long-term relationships.
Tata Nahual undergoes a classic washed process with aerobic fermentation. Ripe cherries are first de-pulped, and the beans are then fermented in the presence of oxygen. They are then thoroughly washed, the parchment beans are sorted by density, and finally, they are air-dried. The washed process helps preserve a cleaner cup profile and allows ample room for fruity notes of yellow plum and lemon, as well as chocolate and caramel sweetness.
