This Colombian coffee from SEY Coffee showcases the Chiroso variety in a light, clean, and distinctly aromatic profile. The flavor profile combines juicy lychee with ripe mango, complemented by the delicate character of oolong tea. The result is a fresh and elegant coffee with fruity sweetness and a subtle tea-like character, which also brings to a close an exceptionally successful Chiroso season from this region.
The coffee comes from the El Tambo farm in the Güíntar area of Anzá, Antioquia, where it is grown by Daniel Caro Lopez, a young second-generation producer. His farm is located at an elevation of 2,200 meters above sea level and is one of the highest in the area. Of the total 33 hectares, approximately five are dedicated to coffee. Daniel focuses primarily on Chiroso and collaborates with SEY on a project that has long been dedicated to this variety in northern Antioquia. This lot comes from the season’s final harvest in July 2026.
Chiroso is a variety primarily associated with the Colombian region of Antioquia, and genetic analyses classify it as an Ethiopian landrace variety. The cherries were hand-harvested at optimal ripeness and subsequently sorted using water. On the very day of harvest, the pulp was removed, and the beans were then fermented for six days while submerged in water. Finally, the coffee was dried on raised beds until it reached a moisture content of approximately 10 percent. It is precisely this washed processing method that allows the clean, fruity, and tea-like character of this variety to shine through.
