Ripe fruit, subtle acidity, and a fresh citrus finish. This Colombian coffee from the SEY roastery, a Pink Bourbon variety, offers a flavor profile combining ripe berries, tamarind, and lime zest. The result is a clean and distinctly fruity profile, in which the sweetness of ripe fruit naturally blends with pleasant acidity and citrus freshness.
The coffee was grown on the El Porvenir farm in the Gaitania region of the Tolima department. Farmer Luis Muños represents the second generation of growers. Before establishing his own business, he gained experience managing the family farm as well as neighboring farms, and in 2016 he even won the regional La Mejor Suavidad competition. This lot from the July 2026 harvest consists of the pure Pink Bourbon variety. It is renowned for its complex acidity and pronounced fruitiness. In both appearance and profile, it resembles Ethiopian landrace varieties, though definitive genetic confirmation of these is still pending.
Pink Bourbon is a variety known for its complex acidity and distinctly fruity character. The cherries were hand-picked at optimal ripeness, sorted using water, and then fermented for 48 hours. After the pulp was removed, the beans underwent another 60-hour fermentation, followed by washing and drying on raised beds to approximately 10% moisture content. This washed process helps preserve the coffee’s clean and juicy character and allows the fruity and citrus notes to shine through.
