DAK Coffee Roasters brings back a coffee loved by fans of juicy fruit flavors – Ethiopia Peachy Daze. The name itself suggests that this will be an experience full of peachy sweetness and fresh juiciness, beautifully complemented by delicate floral notes, a light citrus undertone, and an elegant hint of black tea. This coffee is light yet offers a rich texture and a creamy mouthfeel. It is exactly the type of coffee that will brighten your morning and give you fresh energy and a gentle sense of well-being at the same time.

The beans come from the renowned Chelbesa washing station in the heart of Ethiopia's Gedeb region, where traditional methods and exceptional natural conditions come together. The station processes coffee from small farmers who grow Wolisho and Dega varieties on slopes at an altitude of around 2,000 meters above sea level. These varieties are prized for their delicate fruitiness and floral character, which fully develop in Peachy Daze coffee. Thanks to the altitude and rich soil, the coffee cherries ripen more slowly, allowing them to develop a sweeter and more complex flavor—exactly what makes this coffee so special and popular.

The processing method is classic washed, which is synonymous with clean flavors and a delicate, sparkling acidity in Ethiopian coffees. After harvesting, the cherries are thoroughly sorted and then fermented in water, where the pulp and mucilage are removed to leave only the clean bean. Fermentation is followed by drying on African beds, where the coffee is turned and dried in the sun. This process guarantees a clear flavor profile that resembles the delicacy of tea, sweet peach, and a light citrus touch in the cup—simply a coffee that delights the senses and never gets old.

Pleasant fruity taste and floral aroma
Excellent coffee in the final
It lasts a long time. I'm now finishing my last cup 40 days after roasting, and it's still excellent, fruity, and fragrant.
My impatience caused me to drink most of the bag before the coffee reached its peak flavor. For me, that happened between the fourth and fifth week after roasting. Until then, it was a struggle with an unpleasant roasted taste and a grassy flavor from low extraction.
The coffee just wasn't ready for my incompetence.
Recipe
Preparation method: single pour v60 Coffee (g): 16 Water (g): 250 Water temperature: 92 bloom -> 88 pour Grinder (settings): Kingrinder K6 90 clicks (held almost horizontally)
Process: 40 g bloom for 1 minute -> slow turbulent pouring into 250 g (first a ring the size of a crown, then keep the stream in the center) Total time: 2:30-2:50
