The beans come from the renowned Chelbesa washing station in the heart of Ethiopia's Gedeb region, where traditional methods and exceptional natural conditions come together. The station processes coffee from small farmers who grow Wolisho and Dega varieties on slopes at an altitude of around 2,000 meters above sea level. These varieties are prized for their delicate fruitiness and floral character, which fully develop in Peachy Daze coffee. Thanks to the altitude and rich soil, the coffee cherries ripen more slowly, allowing them to develop a sweeter and more complex flavor—exactly what makes this coffee so special and popular.
The processing method is classic washed, which is synonymous with clean flavors and a delicate, sparkling acidity in Ethiopian coffees. After harvesting, the cherries are thoroughly sorted and then fermented in water, where the pulp and mucilage are removed to leave only the clean bean. Fermentation is followed by drying on African beds, where the coffee is turned and dried in the sun. This process guarantees a clear flavor profile that resembles the delicacy of tea, sweet peach, and a light citrus touch in the cup—simply a coffee that delights the senses and never gets old.
