This Ethiopian coffee from the Beshasha station, roasted by the Czech roastery Father's Coffee Roastery, is a filter coffee with a beautifully clean and fragrant profile. In the cup, you'll find notes of elderflower, black tea, and pomelo, giving it a fresh, slightly floral, and elegant character. Mustefa Abakeno is a small-scale farmer from the Jimma region in western Ethiopia, where he tends to an 18-hectare farm at an elevation of over 2,000 meters above sea level. He gradually built his own processing station, Beshasha, and today he processes not only his own coffee there but also the harvests from neighboring farmers. Thanks to his collaboration with the Falcon team and agronomist Harun, there’s a strong focus here on quality, sustainable farming, and a fairer supply chain. In 2022, Mustafa expanded his operations to include four new collection points, where he selects coffee cherries and transports them for final processing.
The coffee is washed-processed, which helps it maintain a clean and clear flavor profile. The cherries are first sorted in a water bath, then the skin and pulp are removed; they ferment for 8 to 12 hours and are subsequently washed in channels. The coffee is first pre-dried in the shade and then dried for 7 to 10 days on raised beds, which are covered with shade nets during the hottest part of the day. At home, you’ll enjoy it best whether brewed in a V60, Aeropress, Chemex, or French press.
