This is the Colombia ROBINSON Pink Bourbon from producer Robinson Rivera, roasted in Ostrava by Father's Coffee Roastery. This coffee will win you over with its distinctive yet pleasantly balanced flavor, typical of this variety. In the cup, you’ll find a pronounced black currant flavor, the refreshing character of elderflower lemonade, and a hint of milk chocolate that adds a pleasant richness to the overall profile.
Behind this coffee is Robinson Rivera and the ACC association, which operates in the Piendamó area of Colombia’s Cauca region. Robinson helped found the association in 2016 with the goal of helping local growers improve the quality and value of their coffee. Today, it has 77 members whose farms average just 1.5 hectares and are located at elevations ranging from 1,700 to 2,100 meters. ACC provides farmers with feedback, supports quality control, and operates its own laboratory, where certified Q graders (experts in sensory coffee evaluation) regularly taste the coffees.
This lot is processed using the honey method with controlled fermentation. First, very ripe cherries with a high sugar content are hand-picked and then sorted by density. After 12 hours of oxidation, the skin is removed, and the beans ferment for another 36 hours in the sweet pulp that remains on them. The coffee is then slowly dried for 5 to 6 days in a parabolic dryer until it reaches 10% moisture content. It is precisely this combination of highly ripe cherries and controlled processing that helps bring out the distinctive sweetness, fruitiness, and aroma of Pink Bourbon without compromising the clarity of the cup.
