The coffee comes from Colombia, specifically from the Fresno area in the Tolimaregion, and is produced by El Vergel Estate. The producers are Elías and Shady Bayter of Forest Coffee, who are among the leading names in contemporary Colombian specialty coffee. On the farm, they work with Red and Yellow Caturra varieties and have long been dedicated to a modern approach to processing and building a distinctive flavor profile for their lots. It is precisely the combination of the Colombian terroir, the producers’ experience, and the meticulous work on the farm that gives this coffee its open, fruity, and very memorable character.
Processing is carried out using the Natural Anaerobic method , which enhances the coffee’s sweetness, juiciness, and fuller flavor profile. Anaerobic fermentation helps bring out the intensity of the fruity notes and adds greater depth and aromatic complexity to the cup, while natural drying enhances the roundness and overall sweetness. On the palate, this translates to pronounced guava, the citrusy juiciness of blood orange, notes of red fruit, and a subtle cocoa finish.
