Colombia Finca Quebraditas, Maragesha is a delicate floral explosion from the Kaffa roastery. Lavender, rose, thyme, and fresh lemongrass come together in the cup to create a light but distinctive flavor profile with a clean, long finish. This coffee is roasted for filter brewing, so it excels as an elegant pour-over in a V60, in a batch brew, or even in an Aeropress, whenever you feel like a calm, sophisticated coffee instead of another dessert.

The Quebraditas project is the family work of Edinson Argote and Ángela Rojas in the Huila region, specifically in Oporapa, Alto Caparrosa. Together, they manage the Chorro Alto and Finca Quebraditas farms and focus on exceptional varieties and precise work with the soil and agronomy. It is here that the rare Maragesha variety grows, created by the natural combination of the legendary Gesha and Maragogype varieties, which acquire their delicacy, sweetness, and aromatic depth at an altitude of 1,650–1,800 meters above sea level. The result is a very elegant, blooming, and crystal-clear coffee that beautifully showcases the potential of this Colombian terroir.

The processing is based on a combination of the washed method and thermal shock, which aims to bring out the best of the delicate character of the Maragesha variety. The cherries are first selectively hand-picked and sorted, followed by a two-stage fermentation process – 24 hours of oxidation and another 72 hours using yeast and controlled thermal shock. Subsequent drying takes place for approximately 76 hours at a controlled temperature, and the coffee is then stabilized in GrainPro protective packaging to maintain its purity and complexity until roasting.

A very unusual flavor profile. You might come across something like this maybe once every three months. You can taste the spices (ginger, cloves, cinnamon) and a full-bodied acidity. The thermal shock really does the trick. Definitely a five-star
