The Quebraditas farm is located at an altitude of 1,700 meters above sea level in renowned Colombia, where farmer Edinson Argote is pushing the boundaries of traditional coffee cultivation with advanced fermentation methods. Edinson has attracted attention with his approach to innovation, experimenting with different types of fermentation and ingredients. The Typica Mejorado variety grown by Edinson is a modern coffee cultivar known for its large beans and distinctive flavor similar to the famous Gesha variety, making it increasingly popular among coffee lovers.

The coffee was processed using a washed method with innovative elements. After being picked by hand, the coffee cherries are first soaked in water to remove any poor-quality fruit. This is followed by mechanical removal of the pulp and the start of the fermentation process with added enzymes. During fermentation, a so-called thermal shock is repeated several times – the beans are immersed in cold water in bags to control the fermentation temperature. After this precise process is complete, the coffee is carefully dried and hulled, giving it its unique character.

An absolutely unique coffee, with a rich aroma
Sweet
It’s difficult to prepare and requires a very gentle extraction method. I recommend either cold drip or a low pour-over temperature, around 83 degrees. Otherwise, it tastes bitter and soapy.
