The coffee comes from Colombia, specifically the El Tabor area in San Agustín, Huila region. It is produced by Ramón Hoyos Gómez and the Filadelfia family farm, which is the shared heritage of twelve siblings. Each of them works on their own plot, but together they preserve the farm’s name as a tribute to their parents and a symbol of family unity. In addition to Gesha, the farm also grows Pink Bourbon, Tabi, Caturra, Castillo, and Pacamara varieties, as well as tomatoes, beans, peas, corn, and bananas. These crops contribute to self-sufficiency, soil health, and natural shade. A small forest reserve also plays an important role, protecting the soil and providing water for the coffee trees.
The variety is Gesha, known for its floral elegance, citrusy freshness, and tea-like clarity. The coffee grows at an elevation of 1,750 to 1,850 meters above sea level and is processed using the washed method with spontaneous fermentation. After harvest, the ripe cherries are pulped, and fermentation helps remove the remaining layer of pulp from the beans. The coffee is then washed and dried to preserve its clean and bright character. Today, Ramon Hoyos manages the farm with respect for the family’s history, while also experimenting with new methods in his own laboratory and sharing his expertise with neighboring producers. As a result, Filadelfia is not only a family farm but also a place of learning, innovation, and meticulous work with specialty coffee.
