The popular Slovak roastery Concept Coffee Roasters brings us an absolute gem in the form of Colombia Los Nogales. Los Nogales is one of Colombia’s most renowned coffees. The flavor of this coffee will absolutely captivate you with its uniqueness and vibrancy. Its tea-like body, with a fresh apricot flavor, is complemented by citrus notes dominated by orange and a hint of lemongrass, all balanced by a delicate, almost creamy aftertaste.
These beans were prepared for you by Oscar Hernandez himself, whose name is well-known in the coffee world and guarantees quality and uniqueness. His family has owned the farm since 1940, and Oscar inherited it from his father, Ricaurte Hernández, who made the farm famous. The farm is located at an elevation between 1,750 and 1,850 meters, in the village of El Diamante, a short distance from the town of Bruselas in the Huila region. Oscar Hernández enjoys experimenting with processing methods and also excels in the fields of biochemistry and microbiology. This unique coffee features beans of the Orange Bourbon variety, a rare mutation of the Bourbon variety known for the interesting orange color of its cherries.
And now for the most interesting part—the processing of the beans. This is pure alchemy. The beans are processed using the Mosto fermentation method, which is Oscar’s invention. Mosto is the juice produced during the fermentation of coffee cherries, in which the beans are fermented. First, the best cherries are selected and immersed in hot water at 80 °C for 20 seconds, which pasteurizes them and releases additional sugars needed for further fermentation. The skin is then removed from the cherries, leaving the pulp (mucilage) on the beans, which are fermented under controlled conditions for 4 to 5 days. The remaining pulp is then removed, and the beans are sun-dried for 2 to 3 weeks, during which time they are turned regularly.
