The FAVER NINCO specialty coffee from Colombia, from the Canadian roaster September Coffee, is a light-roast filter coffee made from the Papayo variety that captivates with its complex, sweet, and velvety-creamy flavor profile. In the cup, the flavor of ripe red currants harmoniously blends with the lively acidity of wild berries, softened by the sweetness of vanilla yogurt and a subtle hint of almonds. The body feels silky, while the long finish remains layered, elegant, and delicate.

Behind this micro-lot coffee is farmer Faver Ninco and his family. They operate Finca Costa Rica near the town of Santa María in Colombia’s renowned Huila department, where the coffee trees ripen at a high altitude of around 1 ,900 meters above sea level. Faver has been growing coffee for a quarter of a century; he learned the trade from his father and neighbors, and in recent years has focused on specialty coffee and rare varieties. He has also involved his four children in the farm’s operations—each of them tends their own coffee bushes and participates in selecting the varieties to be grown. For the September roastery, this marks its first collaboration with Faver and, at the same time, the very first inclusion of the Papayo variety in its lineup.

Processing is carried out using the washed method with yeast inoculation. The cherries, carefully hand-picked, first ferment for 12–14 hours in the pulp; after hulling, a 72-hour dry fermentation with yeast concentrate follows, and drying takes 72–84 hours. Papayo itself is a rare Arabica variety characterized by elongated cherries resembling miniature papayas.
