Ecuador Finca Del Putushio from September Coffee is a filter coffee that emphasizes clarity, lightness, and juicy freshness. In the cup, you’ll find notes of fresh green grapes, sparkling lemon-lime, and sweet yellow plums. The flavor is bright, clear, and very smooth, with a light body and a clean finish. This coffee doesn’t rely on heaviness or pronounced fermentation, but rather on the precision, delicacy, and sweetness of the Mejorado variety. Thanks to its lightness and pronounced freshness, it’s perfect for brewing as a clean and refreshing pour-over.
The coffee comes from Ecuador, specifically the Loja and Putushio regions. It is cultivated by Jose Jijon, Pepe Jijon, and Francisco Vintimilla, and this lot originates from the Fincas Del Putushio farms. Jose is the son of the award-winning producer Pepe Jijon and has been involved with coffee since his youth. His San Pedro farm, together with Francisco Vintimilla’s farm, forms the sister project Fincas Del Putushio, which continues the work of the Jijon family. The coffee trees grow at an elevation of 2,222 meters, and the lot consists of the Mejorado variety, which is primarily associated with Ecuador. According to current knowledge, it was created by crossing the Bourbon variety with native Ethiopian coffee trees.
Processing is carried out using the traditional washed method. After harvesting, the Mejorado cherries are pulped the same day and left to rest overnight in dry parchment. The coffee is then washed with fresh spring water and slowly dried on covered raised beds for 30 days. Thanks to this process, the resulting cup remains clean, light, and distinct.
