The coffee comes from Guatemala’s Acatenango region and was grown on the El Llano farm owned by producer Raúl Pérez. The farm spans approximately 45 hectares and lies in the shadow of the Fuego volcano, adjacent to another 45 hectares of a natural forest reserve. The Pérez family has long focused on quality, sustainability, and meticulous work with individual lots. They’ve also recently built their own laboratory on the farm, allowing them to taste and evaluate the coffee right on site. The coffee trees grow at an elevation of around 1,600 meters above sea level, where conditions are ideal for slower ripening and the development of a delicate, floral profile.
The variety is Geisha, which has its roots in the Ethiopian coffee forests and is renowned primarily for its distinctive floral notes, tea-like lightness, and delicate citrus profile. At El Llano, it is processed using the traditional washed method, and the entire process—from harvesting to drying—is done by hand. After harvest, the cherries are pulped; fermentation removes the remaining layer of pulp, and the beans are then washed and dried. It is precisely this washed processing that allows the purity of the variety and the local terroir to shine through fully, without heavier fermentation notes. The result is a light and precise filter coffee with notes of jasmine and grapefruit and a long, sweet lemonade-like aftertaste.
