Imagine coffee born under the African night sky. This unique Ethiopian lot from the Canadian roaster September Coffee holds a great secret and will completely captivate you with its incredible depth. Your senses will first be captivated by the intoxicating aroma of bergamot. It will immediately draw you into the experience and set the stage for a massive explosion of sweetness. On the tongue, a rich jam made from simmered pears and extremely juicy yellow plums literally melts away. To keep this fruity ride from feeling heavy, citrus notes instantly brighten the entire composition. This is pure coffee alchemy with a silky body and an endlessly long, sweet finish.

These select beans come from a family farm in the village of Awano in Ethiopia’s West Limu region. The coffee trees grow at an elevation of 2,000 meters above sea level under the supervision of an expert named Moata Raya. He is one of the most respected figures on the contemporary African coffee scene. Moata runs his own quality laboratory in Addis Ababa and has spent years helping other farmers achieve world-class results. Now he is finally applying his wealth of experience to his own harvest. On his land, he grows the local variety 74110, bred in 1974. Its original parent tree comes from the village of Bishari, and the plant is notable today for its compact growth habit.

Processing is carried out using a unique experimental method called “Lunar Honey.” Exactly 8 hours after harvest, the ripe cherries undergo mechanical hulling, during which machines remove just 5% of the sweet pulp. This is followed by a lengthy drying phase that deliberately takes advantage of cooler nighttime temperatures and the complete absence of sunlight. The parchment beans are transferred to African beds exclusively at night, where workers carefully turn them every 2 hours. This specific process takes 10 to 12 days. The slow nighttime fermentation lends the coffee an incredibly clean character and significantly enhances its fruity complexity.
