Colombia Brisa Eterna captivates with its exceptionally clean and juicy profile. The flavor is dominated by a pronounced acidity reminiscent of pink lemonade, complemented by the sweetness of wild berries and a fresh grapefruit aftertaste. The individual notes unfold beautifully in the cup, creating a harmonious whole. The citrus freshness lingers from the first sip to the finish, while the fruity sweetness lends the coffee a pleasant balance. The result is an elegant coffee with a clean flavor profile that fully showcases the potential of the washed Caturra variety grown at high altitudes.
The coffee comes from the Brisa Eterna farm in the village of La Cocha, in the municipality of Funes, in Colombia’s Nariño region. The farm is owned by Alvaro Noguera, an agronomist from San Juan de Pasto, who is continuing a family project founded in 1998. The coffee trees grow on five hectares at an elevation of 2,000 meters, where volcanic soil rich in organic matter and warm winds flowing through narrow canyons create ideal conditions for the slow ripening of the cherries. The variety grown is Caturra, a natural mutation of Bourbon known for its high flavor potential at higher altitudes.
The coffee was processed using the washed method, supplemented by several carefully controlled fermentation steps. The hand-harvested cherries are sorted by color and density, then fermented for 24 hours in sealed tanks with limited oxygen access. They are then mechanically hulled without the use of water and undergo a second fermentation lasting 18 to 24 hours, during which a layer of pulp remains on the bean. Afterward, they are washed with clean water and sun-dried for approximately 18 days. Thanks to this process, the coffee retains the clarity typical of washed processing while also developing a distinctive fruity character.
