Clean, floral, and with beautifully distinct fruit notes—that’s this Ethiopian Nensebo Refisa from the Canadian roaster September Coffee. On the palate, it combines pronounced floral notes reminiscent of black tea with stone fruits—especially peaches and plums—and a subtle citrus note evoking lemon tea. The coffee has a lighter body and a very clean, elegant profile, so it will particularly delight those of you who enjoy fresh and distinctly floral Ethiopian filter coffees. September roasts it light for filter brewing, allowing its delicate character to shine beautifully when prepared as filter coffee.
The coffee comes from the Nensebo area in the Oromia region, where it is grown by smallholder farmers in the Roricho, Bulga, and Solena localities at an elevation of 1,900 to 2, 070 meters above sea level. Processing takes place at the Nensebo Refisa station, and the lot is sourced by SNAP Specialty Coffee. SNAP Specialty Coffee collaborates with farmers in several Ethiopian regions and also operates partner processing stations. This lot consists of the Wolisho and Dega varieties, which are among the traditional Ethiopian varieties and form part of a very diverse group of native Ethiopian coffee trees.
After harvest, farmers bring the ripe cherries to the station, where they are first sorted and any defective fruits are removed using water. The coffee is then processed using the washed method, in which the beans, after the pulp has been removed, are soaked for approximately 5 hours and then fermented for 72 hours. After fermentation, they are thoroughly washed and spread out on elevated African drying beds. Drying takes about 9 to 11 days, until the beans reach a final moisture content of around 10.5%. It is precisely this meticulous washed processing that highlights the purity, lightness, and clearly discernible fruity notes of this coffee.
