Ethiopia Echemo by Tim Wendelboe is a washed coffee that evokes the feeling of a peaceful morning with a cup of delicate tea and the scent of a blooming garden. Light floral notes gradually blend with hints of white tea and the sweetness of ripe stone fruit, bringing a pleasant juiciness and elegance. The coffee is clean, smooth, and harmonious, with a delicate character that invites you to slowly savor every sip. It’s the ideal choice for those seeking a light yet complex filter coffee with a fine texture and a distinctive aromatic experience.

The coffee comes from Ethiopia, specifically the Goma area in the Jimma region, and is produced by Khalid Shifa, a third-generation farmer and owner of the Echemo farm. The coffee trees grow here at an elevation of 2,100 meters above sea level, where the mild daytime climate and cooler nights slow the ripening of the coffee cherries and promote high-quality beans. Khalid primarily cultivates heirloom Ethiopian varieties originating from the nearby Coche Forest, whose seeds were selected by his grandfather many years ago. The farm is also working to restore the original forest environment and grows coffee organically without the use of pesticides, herbicides, or mineral fertilizers.

Processing is done using the washed method. After being hand-harvested and carefully sorted, the coffee cherries are pulped, and the beans are left to ferment in water for approximately 24 hours. The coffee is then washed, sorted, and dried on raised tables under shade nets for approximately 12 to 14 days. Regular turning during drying helps ensure an even result and preserve the purity, floral notes, and delicate texture that are characteristic of this coffee.

Tip from the roaster: When ground, this coffee may produce more fine particles, which can slow down the water flow during pour-over brewing. We therefore recommend stirring the coffee grounds as little as possible during brewing and allowing the coffee more time—a longer extraction will help it develop a more pronounced aroma and sweetness.
