Red apple, clementine, and tarragon. This Ecuadorian Typica from the Canadian roaster Sorellina is a filter coffee for anyone who enjoys clean and fresh coffees but also wants something a little unusual in their cup. Red apple brings a juicy fruitiness, clementine adds citrusy freshness, and tarragon provides a subtle herbal note that pleasantly sets the entire profile apart. The result is an elegant and lively coffee that feels light and clean, yet has enough character to keep you engaged even when sipped slowly. It’s exactly the kind of pour-over where familiar fruity flavors meet an unexpected twist.

The coffee comes from Finca La Josefina in Ecuador, run by Leopoldo Andrade. The farm is located in the Cayambe Coca region, where coffee trees grow at high altitudes of approximately 1, 800 to 2,000 meters above sea level. Several interesting varieties are grown at Finca La Josefina, and this coffee belongs to the Typica variety, which has the opportunity in this lot to showcase its cleaner and more delicate side. The farm’s high elevation and the focus on this specific variety result in a coffee that doesn’t need aggressive processing to captivate in the cup.

This time, the coffee underwent a washed process, in which the skin and pulp are removed from the coffee cherries after harvest, and the beans are then washed and prepared for drying. This processing method allows the coffee’s purity and individual flavor notes to shine through, resulting in a clean separation of flavors in the cup. In this Typica, sweeter red apple, fresh clementine, and an unconventional herbal touch of tarragon harmonize side by side. Finca La Josefina from Sorellina thus offers a fresh, clean, and slightly playful pour-over that’s particularly interesting for how naturally it combines fruitiness with subtle herbal notes.
