Ruby Rush comes from the Huila region of Colombia and is not made from a single variety or a single farm. It is a field blend of several microlots from local producers—that is, a mix of multiple varieties and productions from the region. The coffees come from various farms and grow at an altitude of approximately 2,100 meters above sea level. It is precisely the combination of smaller lots that allows for a consistent flavor profile dominated by sweet berry notes, while still offering sufficient body for espresso. September roasts this coffee specifically for espresso and milk-based espresso drinks, so the resulting profile has enough sweetness and body to stand on its own in a cappuccino or flat white.
The processing is anaerobic and washed, using a method known as Cochadas. Every four to seven days, freshly harvested and hulled coffee is added to previous harvests, and the entire lot is homogenized. On the final day, the coffee is thoroughly washed and prepared for drying. Most of the lot ferments in water, which helps keep the resulting profile cleaner and limits overly wild fermentation notes. At the same time, the process still produces plenty of sweetness and fruity intensity, which is typical of Ruby Rush. In an espresso, juicy berry flavors blend with smooth caramel and a silky body that ties the entire cup together nicely.
