Sometimes a single sip is all it takes to realize that this coffee has something to say. This Colombian coffee from September Roasters doesn’t dazzle with flashy fermentation techniques or excessive intensity. Instead, it focuses on purity, energy, and a perfectly clear flavor profile. From the very first whiff, fresh citrus notes emerge, and with every subsequent sip, the cup opens up even more. You’ll find juicy lime, white grapes, and a hint of grapefruit, all of which lend a pleasant sparkle to the overall flavor. The coffee feels light and lively, yet it also has a depth that compels you to slow down and truly savor it. This is the kind of filter coffee that, once you’ve finished it, doesn’t make you think about what you’ve just tasted, but rather about when you’ll brew your next cup.

Behind this coffee is José Norbey Vargas from Finca La Hormiga in the Santa María area of Colombia’s Huila region. He was introduced to coffee as a child by his father, from whom he gradually learned everything important. Today, he works as part of a family team alongside his father and brother, and it is their daily collaboration that forms the foundation of the quality you can taste in the cup. On the farm, they never rush anything. They harvest the coffee cherries only when they reach ideal ripeness, and every subsequent step in the processing follows with an emphasis on purity and preserving the variety’s character. The result isn’t a coffee that tries to be extravagant at any cost, but a cup that fully reflects the work of people who know their craft and take their time with it.

Pink Bourbon is one of the most interesting Colombian varieties today, and it is in the Huila region that it truly shows its full potential. It is prized for its distinctive aroma, natural sweetness, and lively citrus acidity. In this case, the coffee was processed using the washed method. After careful hand-picking, the cherries were sorted and hulled, followed by approximately 20 hours of fermentation and slow drying for 10 to 12 days. It is precisely thanks to this process that the coffee retains its fresh character, clear flavor, and beautifully defined fruity notes.
