Rigo Chavarro farms two small plots high up in the Oporapa area of the Huila region, where the climate changes dramatically with each season. At an altitude of 1,800–1,900 meters above sea level, he grows exclusively Pink Bourbon on one hectare – a variety that originated in the village of San Adolfo in 2014 and has since won the hearts of many producers thanks to its resistance to rust and its excellent quality in the cup. Rigo himself traveled to San Adolfo to obtain seeds for Pink Bourbon so that he could move away from commercial varieties and focus on quality.
The coffee is washed with an emphasis on cleanliness and precise fermentation.
