Colombia Finca El Diviso Decaf from Kaffa Roastery is a decaffeinated coffee that certainly doesn’t feel like a fallback option for the evening. Its flavor profile combines a delicate vanilla sweetness with fresh lemongrass, mandarin, and jasmine blossom. The resulting cup is delicate, clean, fragrant, and beautifully elegant. The acidity is lively yet pleasantly subtle, and the body is light and sweet.
The beans come from Colombia, specifically the Pitalito region of Huila, which is among the most renowned areas for specialty coffee. They were grown on the El Diviso farm, run by the Lasso family. The farm is located at an elevation of 1,780 to 1,900 meters above sea level and covers an area of 14 hectares. Nestor Lasso is part of a new generation of farmers who focus on quality, micro-lots, and precise control of the entire process from cultivation to harvest. It is precisely thanks to this meticulousness that the coffee has a clean and complex profile, which clearly showcases the potential of the Pink Bourbon variety and the El Diviso farm itself.
The variety is Pink Bourbon, known for its aroma, elegance, and sweet, layered character. The coffee was decaffeinated using the Sugar Cane Decaf ( EA) method. In this process, ethyl acetate derived from sugarcane—which also occurs naturally in fruit—is used to remove the caffeine. The goal is not only to remove the caffeine from the coffee but also to preserve its sweetness, purity, and flavor complexity. In this lot, it delivers the very best we can expect: the vanilla remains delicate and rounded, lemongrass and mandarin add freshness, and jasmine flower softens the entire cup. The result is a coffee that no one would ever guess is decaffeinated.
