A delicate sweetness reminiscent of cane sugar holds the entire profile together and balances the intense fruitiness. The body is medium-full, smooth, with a clean progression of flavors. The aftertaste is long, sweet, and fruity, with a subtle fermented accent that underscores the cup’s complexity.
This coffee exemplifies the current direction of Colombian specialty coffee production, where precise farm work is combined with experimental processing. Behind the project is El Vergel Estate, led by brothers Elias and Shady Bayter, who are among the pioneers of modern fermentation methods in Colombia. Their approach combines controlled processes, collaboration with other farmers, and an emphasis on maximizing the potential of each harvest. El Vergel Estate also functions as a central processing station where coffee from smaller producers is brought together, thereby standardizing quality and opening the door to innovative lots. The cherries come from the Huila, Tolima, and Caldas regions, areas with ideal conditions for growing coffee. An altitude of around 1,750 meters above sea level, a stable climate, and volcanic soils slow down ripening, allowing for the development of complex acidity and sweetness.
The processing method plays a crucial role, combining the washed method with controlled co-fermentation with passion fruit. Co-fermentation takes place after a short anaerobic pre-fermentation of whole cherries to develop sweetness and structure. After depulping, the coffee ferments with added passion fruit and specific yeasts, with all conditions precisely controlled to enhance fruitiness and preserve the purity of the profile. Subsequent washing and slow drying stabilize the resulting character, which combines the clarity of washed coffee with distinctive, juicy fruitiness. A cupping score of 87.8 confirms that this is truly an exceptional coffee worth tasting.
