Colombia Los Nogales from the Punkt roastery is a filter coffee that captivates with its distinctive juiciness, sweetness, and uniquely structured flavor profile. Thanks to controlled fermentation, the Orange Bourbon variety comes across as very lively and rich; the cup reveals notes of mandarin, candied orange peel, and cola with rum. The resulting profile is intense, fruity, and at the same time smooth, with a pleasant body and a long finish. It is a coffee built on a combination of sweetness, distinctive aromatics, and modern processing.
Behind this lot stands the family farm Los Nogales, located in the village of El Diamante near the town of Bruselas in the southern part of Colombia’s Huila department . Its history dates back to the 1940s, when it was founded by the Hernández family and later significantly developed by Ricaurte Hernández. After his death , his son Oscar Hernández carried on the family tradition ; under his leadership, the farm was revitalized and became an inspiration for other farmers in the region. It is precisely this combination of a long tradition and a contemporary emphasis on quality that gives this coffee its solid foundation.
The processing of this coffee is based on lactic fermentation with a thermal shock, which significantly shapes its final character. After careful harvesting and floating, the beans are briefly exposed to water at 80 °C and then rapidly cooled, which helps break down sugars and stabilize fermentation. The coffee is then hulled, placed in fermentation barrels with the addition of a must made from coffee cherry skins, and fermented for a total of 120 hours. A final 15-day sun-drying period concludes the process, resulting in exceptional sweetness, fruitiness, and rich aromatics in the cup.
