Behind the coffee is Colombian producer Edinson Argote, who has been raising local standards of quality and consistency at his Quebraditas farm, located at an altitude of around 1,800 meters above sea level. He mainly grows Caturra and bases his approach on careful selection and meticulous work with the freshness of the cherries – from harvesting and sorting to drying. Thanks to the limited scope of production, he can afford to be patient and meticulous, which is clearly evident in the result: the cup exudes a clean, clearly discernible aroma and flavor that remains consistent from the first sip to the last aroma in the cup. Coconut Madness is exactly the type of coffee that delights with its story and result – without the compromises that sometimes accompany more daring experiments.
Edinson first sorts the perfectly ripe coffee cherries to remove any defects and oxidizes them for 24 hours in plastic barrels, which is an important step for the subsequent fermentation of the cherries with enzymes, as the coffee cherries then tolerate this fermentation better. He dry-hulls the cherries and ferments them for 72 hours together with coconut and an enzymatic extract, which helps the coconut to be absorbed through the parchment that protects the coffee bean. For precise control over drying, Quebraditas uses electric dryers that dry the beans thoroughly in just 72 hours, which is a huge time saver and allows Edinson to verify the quality of production very quickly.
