MIXE-UP from the 2 :AM Specialty Coffee roastery is their first blend and demonstrates just how varied the flavors of coffee from a single country can be. A single package brings together two Colombian coffees, two varieties, two regions, and two processing methods. The base consists of 80% Papayo, complemented by 20% Sidra. The result is a harmonious and approachable cup that is anything but boring. Expect flavors of fresh grapefruit, juicy red currants, and an unusual herbal hint of rosemary.
The Papayo was grown by Jhon Gomez at Finca La Guayacana near Buesaco in the Nariño region. The coffee trees grow here at an elevation of 2, 200 meters on volcanic soil, in a cooler mountain climate and under intense sunlight. As a result, the cherries ripen more slowly and develop a more pronounced aroma. Sidra comes from Finca Villa Pastora, which is tended by Gerson and Julieth Mora in the Huila region. It grows at 1, 650 meters, in a fertile volcanic environment surrounded by forests. The ripe cherries are hand-picked and carefully sorted. Papayo underwent honey processing and 48 hours of anaerobic fermentation, while Sidra was processed using an experimental washed-natural method. Slow drying helped preserve the sweetness and fruity character of both coffees.
MIXE-UP is a great choice when you want a flavorfully interesting coffee that’s also easy to drink. It works well in an espresso machine or moka pot, where the sweetness, currant notes, and herbal finish come through more prominently. In a V60, Chemex, or AeroPress, on the other hand, the grapefruit-like freshness and cleaner fruit profile really shine. It also works well in a French press, drip coffee maker, or for cold brew. It’s a versatile blend for a peaceful morning or an afternoon break, offering something new with every sip.
