Nectar N°1 is a Colombian coffee from the Belgian roaster 2 :AM Specialty Coffee. With this coffee, they are launching the first chapter of a series of exceptional micro-lots that will be gradually revealed. Its intensely fruity profile combines juicy papaya, crisp green apple, and a delicate floral note of hibiscus in a cup that is clean, silky, and features a long, lively, lingering finish. The Papayo variety is given the opportunity to shine in all its glory.
The coffee comes from Finca La Guayacana in the municipality of Buesaco in Colombia’s Nariño region, where the cherries ripen at an elevation of 2, 200 meters above sea level. The cool mountain climate, ample sunshine, and rich volcanic soil create the conditions for slow ripening, which gives the cherries their distinctive sweetness and aromatic complexity. Orígenes Coffee Co. is behind the production; the company works closely with local growers and carefully oversees every stage of the process to ensure that the character of this terroir fully shines through in the cup. Harvesting is done exclusively by hand and only when the cherries have reached perfect ripeness.
Nectar N°1 undergoes honey processing, in which the cherries are only partially pulped after harvest, and some of the sweet pulp remains on the bean throughout the drying process. Through controlled fermentation, this pulp gradually seeps into the bean, naturally enhancing the fruitiness and sweetness of the resulting profile. Slow and precise drying then ensures a uniform flavor across all beans, bringing out not only their sweetness but also their complexity and balanced aroma.
