Ethiopia LINGERING DREAMS is a limited-edition specialty coffee from the Brno-based roaster Fiftybeans, which reminds us why washed Ethiopian coffees are among the most popular in the world. After several weaker harvests, this year’s crop once again showcases their characteristic elegance and purity. In the cup, you’ll find a juicy and balanced flavor profile with notes of green tea, ripe stone fruits, and fresh citrus. A subtle sweetness gradually develops into a long, clean finish, while a light floral aroma underscores the overall freshness.
The coffee comes from the Gedeo area in the Yirgacheffe region, one of Ethiopia’s most renowned growing regions, where Heirloom coffee trees grow at an elevation of around 2,000 meters. Small local farmers deliver the coffee cherries to the Chelchele processing station, which consolidates the harvest from surrounding farms and carefully oversees every step of the subsequent processing. The high altitude, the slow ripening of the cherries, and the expertise of the station’s staff result in a coffee with a distinctive liveliness, pleasant sweetness, and excellent clarity of individual flavor layers.
The beans were processed using the traditional washed method. After harvest, the cherries are first cleaned of debris and then undergo water separation to remove lower-quality fruit. They are then pulped and fermented for approximately 24 hours in tanks, where the remaining pulp is naturally released. Fermentation is halted by thorough washing in channels of clean water, and the beans are then dried on shaded African drying beds. The washed processing gives this coffee an exceptionally clean flavor profile, clearly defined acidity, and elegant sweetness, allowing notes of green tea, stone fruit, and fresh citrus to shine through.
