The flavor profile of this coffee from DAK Coffee is one big, playful ride. The cup is dominated by an intense and sweet tropical fruit flavor, complemented in the background by juicy notes of wild berries. This whole funky profile is wonderfully refreshed and brightened as you drink it by a clean, sparkling hint of lemongrass. This is what’s known as a “mega blend, ” which means that individual packages may vary slightly in flavor. However, the overall character remains uncompromisingly tropical, complex, and full of energy. It’s the ideal filter coffee for those who are bored with classic, predictable profiles.
The beans come from the renowned Colombian farm Finca Los Nogales, located at an optimal altitude of 1,750 m above sea level. Behind this project is the innovative producer Oscar Hernandez, who is recognized in the global coffee community as a master of unconventional methods. For this unique blend, he has assembled a diverse palette of varieties, including Typica, Caturra, and Cenicafe. Oscar Hernandez does not wait to see what nature comes up with on its own; rather, he actively intervenes in the entire growth and ripening process, thereby transforming this farm into a state-of-the-art laboratory for producing coffees with an extraordinarily deep sensory profile.
What gives Casa Tropical coffee its unique, slightly wild character is Oscar’s proprietary process called Experimental Washed (High-Intervention). Unlike traditional washed processing, which emphasizes purity and minimalism, this is a process involving a high degree of human intervention. During fermentation and washing, chemical and microbiological variables are strictly controlled, and both temperatures and processing times are adjusted, which awakens an unprecedented amount of aromatic compounds and distinctive fruity notes in the beans—characteristics more commonly found in natural coffees.
