PLUM BUTTER from Amsterdam-based DAK Coffee Roasters represents their very first—and only—purchase from Uganda this year. It offers an exceptionally captivating experience that you’ll love for its velvety-creamy texture and distinctive natural sweetness. In the cup, a deep flavor profile unfolds with notes of dark, ripe plums and juicy grape syrup, elegantly complemented by a rich undertone of excellent, authentic cocoa. The result is an amazingly harmonious, layered, and exceptionally complex cup.
This unique lot comes from the Bulambuli region in eastern Uganda, where approximately 400 smallholder farmers are involved in its production. Local farmers cultivate small family plots, most of which do not exceed a single hectare in size, allowing them to devote maximum individual care to each coffee tree. Coffee trees of the SL14 and SL28 varieties ripen here at altitudes ranging from 1,700 to 2,300 meters. It is precisely these extreme high-altitude conditions and the slower ripening of the cherries that give the beans their high density and an unprecedented concentration of flavor compounds.
The hand-harvested cherries were transported to the Bulambuli Washing Station, where they were processed using the traditional natural method. The whole fruits were dried on African drying beds directly in the sun, where they were regularly turned to achieve perfect and even moisture content. Thanks to the presence of sweet pulp throughout the drying process, the fruit sugars transfer directly into the coffee bean, creating a distinctly full body, juiciness, and syrupy sweetness.
