There are coffees you savor, and then there are those that disappear before you even have a chance to ask for another cup. POPPY SODA from DAK Coffee Roasters falls squarely into the latter category, but luckily we have a new harvest. The flavor is similar to the previous lot, with just a few subtle differences. This coffee is a bit sweeter and cleaner, and in the cup you’ll detect a playful profile reminiscent of lemonade, jasmine tea, and notes of peach. The aroma is once again very pleasant, the flavor bright and juicy, with a silky texture that will make you slow down and truly enjoy your coffee ritual. If you hesitate, you risk missing out on this experience.

Behind this exceptional coffee is producer Sebastián Ramírez, who grows it in Colombia’s Quindío region at an elevation of around 1,800 meters. It is here, in an environment ideal for the slow ripening of coffee cherries, that the foundation for a complex and distinctive flavor profile is laid. Sebastián is known for his innovative approach and ability to push the boundaries of traditional production. The Pink Bourbon variety, which is prized in its own right for its sweetness and elegance, takes on a new dimension here thanks to his precise work and attention to detail. Each lot is the result of careful selection and a commitment to creating something truly unforgettable.

The entire character of this coffee is built on a multi-stage washed process, which combines several phases of fermentation and washing. The coffee cherries undergo repeated, controlled processes that allow the complexity of flavors to develop without losing their purity. This method highlights the floral aroma and the sweetness of stone fruits, while keeping the cup bright and clear.
