This exclusive variety comes directly from visionary farmer Diego Bermúdez, whose innovative approach to coffee cultivation has made the Cauca region of Colombia famous around the world. The coffee grows at an altitude of 1,900 meters above sea level, which, together with the region's unique climate and rich soil, contributes to its exceptional quality. Bermúdez is known for his pioneering techniques and obsession with perfection – each harvest is carefully selected and monitored to ensure that the final product meets the highest standards. The Hachi project focuses on experimental processing methods that result in coffees that are enthusiastically received around the world.

This Gesha variety has undergone the classic washed method, but the cherries are left to ferment slightly in water. The green beans are then passed through a pulper, which removes the skin and pulp. The remaining green beans with pulp residue are then fermented for several hours to make it easier to separate the remaining pulp. After fermentation, the beans are washed with water to remove any remaining sugar. The coffee is then dried in the sun on concrete slabs or raised beds. In some cases, mechanical dryers are used if outdoor conditions are not suitable. The resulting coffee processed using this method has a cleaner taste, higher acidity, and distinct fruity notes.
