Faver Ninco Pink Bourbon from September Coffee is a Colombian filter coffee that will win you over with its combination of juiciness, sweetness, and delicate floral notes. In the cup, it evokes sweet pink lemonade, fresh raspberries, and white flowers. It has a light body, a pronounced yet pleasantly sweet citrus acidity, and a long floral finish, giving it a clean and elegant character. It’s a distinctive Pink Bourbon that isn’t afraid to show its character, yet doesn’t come across as heavy or overly experimental.

The coffee comes from Colombia, specifically the Santa Maria area in the Huila region, where Faver Ninco and his family grow it on the Finca Costa Rica farm. He has been involved in coffee for about 25 years, gaining experience from his father and neighboring farmers. About six years ago, he became more interested in specialty coffee and specific varieties, and he gradually involved his four children in the work as well. Today, each of them owns their own coffee trees and chooses the varieties they want to grow, making production a true family project. The coffee trees grow at an elevation of approximately 1,900 meters above sea level, and the harvest is from 2026.

The variety is Pink Bourbon, known for its sweet, distinctly aromatic, and fresh profile. Although the name refers to Bourbon, genetic analyses classify it as an Ethiopian landrace. It is processed using the washed method, but the process itself is quite complex. Perfectly ripe, hand-picked cherries are first fermented for 24 to 30 hours. The pulp is then removed, followed by a second anaerobic fermentation—without oxygen—which lasts another 60 to 80 hours. Finally, the coffee is washed once to leave a thin layer of mucilage on the beans, which helps enhance the body and fruitiness. The result is a clean and bright cup with raspberry-like juiciness, a sweet citrus note, and a delicate floral finish.
