This unique micro-lot originates in the heart of Colombian coffee culture, in the fertile department of Quindío. The beans were grown on the renowned Santa Monica farm, led with immense passion and vision by legendary grower Jairo Arcila, known worldwide for his bold, experimental lots. The stable mountain microclimate and the meticulous care provided by the farming family, in collaboration with the Cofinet project, create ideal conditions for producing coffee cherries with exceptional density and immense aromatic potential.
In terms of botanical origin, this is the Yellow Sudan Rume variety, a rare natural yellow-fruited mutation of this highly prized cultivar. The coffee was processed using a precise and extended natural method. The hand-picked ripe yellow cherries first underwent a controlled 45-hour aerobic fermentation, which initiated the development of deep fruity and spicy compounds. This was followed by a very slow and carefully controlled drying of the whole cherries on elevated African drying beds, with constant turning. This meticulous dry-processing method gave the coffee a rich body, concentrated natural sweetness, and an absolutely unforgettable clarity of flavor nuances.
