Blue Bonbon from Slow Coffee is an utterly captivating and playful filter coffee that will instantly transport you back to memories of your favorite childhood candies. Right from the start, you’ll be enchanted by the intense and nostalgic sweetness of blue raspberry-flavored candies, perfectly balanced in the background by the vibrant and juicy acidity of ripe red currants. As the drink gradually cools, rich layers of candy-like sweetness emerge, perfectly complemented by delicate floral notes that lend the cup lightness, elegance, and a long-lasting, clean finish.

This premium micro-lot of the highest Grade 1 quality originates from the cradle of specialty coffee—the renowned Yirgacheffe region of Ethiopia, specifically the Gedeb district and the Banko Gutity area. The beans come from the Gargari Gutity processing station. The station works closely with approximately 3,200 smallholder farmers from surrounding communities, such as Halo Berity and Chelchele, who cultivate coffee trees on small family plots. It is precisely the high-altitude conditions and cool nights that allow the coffee cherries to ripen slowly, resulting in beans with exceptional density, natural sweetness, and a complex aromatic profile.

In terms of botanical origin, these are selected Ethiopian varieties 74110, 74112, and 74165. The coffee was processed using the innovative and experimental “Supernatural” method, which pushes the boundaries of the classic dry process. The whole coffee cherries were dried very slowly in thicker layers under carefully controlled exposure to sunlight and airflow. This extended and strictly controlled drying process allowed the beans to absorb the maximum amount of fruit sugars from the pulp and develop a rich sweetness, while continuous manual sorting ensured the preservation of absolute purity and vibrancy in the flavor.
