Sometimes you come across beans whose texture and lightness are reminiscent of the purest teas. That’s exactly what this captivating Ethiopian offering from Quickborn Roastery is like. This noble aroma is immediately complemented by the crystal-clear and invigorating flavor of ripe lime, which adds a sparkling and refreshing touch. This micro-lot comes from the famous Yirgacheffe coffee region, specifically the Gedeb area. The Chelbesa processing station itself is located in the small village of Danche, from which this coffee takes its name. Approximately 672 small-scale farmers from the immediate vicinity supply their freshly harvested cherries here. The coffee trees here grow exclusively in the shade of taller trees, which ensures ideal conditions for the slow ripening of the local varieties designated as numbers 74158 and 74112. The washing station was built in 2019 by SNAP Specialty Coffee, a company founded by Negusse Debela. The goal of this project is to source the highest-quality ripe cherries while actively improving the standard of living for local residents. The company provides specialized training to more than 6,000 farmers, teaching them sustainable farming practices and offering them tremendous support.
The washed processing begins with water flotation, which reliably separates damaged cherries. This is followed by gentle mechanical hulling of the outer skin and transfer to fermentation tanks, where the beans ferment for 2–3 days. They are then soaked in clean water for 12 hours. The next phase involves 7–10 days of slow drying, during which the beans are regularly turned on African drying beds. Once completely dry, the coffee undergoes rigorous manual sorting and final mechanical processing.
