The coffee comes from the Tolima region of Colombia, specifically the town of Planadas, where the Finca El Jardín farm is located. Behind the farm is Jorge Elías Rojas, who represents the fourth generation of coffee growers in his family. He carries on the family tradition with his own unique approach and, in recent years, has increasingly focused on specialty coffee, meticulous work on the farm, and experimenting with various fermentation and drying methods. His experimentation has yielded significant success; in 2022, coffee from El Jardín took 3rd place in the Colombian Cup of Excellence.
This lot consists of the Pink Bourbon variety, which is known for its pronounced fruitiness, floral notes, and high sweetness. Although its name suggests a connection to Bourbon, genetic research places it closer to Ethiopian landrace varieties. El Jardín underwent anaerobic washed processing, during which carefully sorted cherries undergo several days of fermentation in sealed tanks without oxygen. This is followed by washing and a precisely controlled drying process divided into several phases. It is precisely this controlled fermentation that helps develop a distinctive and layered profile, while the washed processing preserves its clarity and freshness.
